As a G3000 user I find the few buttons and knobs absolutely essential in turbulance. Voice activation of controls could be a supplement but pure touchscrean is a no go.

I’d check if a finger/thumb can be held on edge of display to stabilize hand.

Voice recognition software can be tricky - various frequencies in a person’s voice (people who grew up in India lack high frequencies as their language doesn’t use much), some people lack diction though I suppose they shouldn’t be pilots. :-o)
